I tasted the creme de calissons very recently on a trip to Provence, and considering that I have been a fan of calissons since early childhood, it is no surprise that I fell head over heals for the creme. It is softer and creamier than the traditional calisson almond and fruit paste, and spreads easily on a croissant or a piece of bread for breakfast. But there are probably a million other possibilities, like using it to stuff pastries, or to wrap around fresh fruit or to use as a sweet dip. The Roy Rene brand produces some of the best calissons in the world, and they have managed to replicate faithfully the taste and the scent of their product in this creme. One word of warning: it's addictive, and God only knows how many calories are in a teaspoon... So wait until you are back from that long walk in the lavender hills of Provence (or whatever hills are in your neighborhood) before dipping into the jar!
